Chorizo and Four-Cheese Scramble Cape May Cafe Beach Club

Ingredients

  • 8 eggs
  • 1 tbsp butter
  • 1 oz chopped chorizo sausage (cooked variety)
  • 1/4 cup 4 cheese blend (swiss, white cheddar, gruyere, provolone)
  • 2 tbsp diced white onion
  • 2 tbsp chopped scallions
  • 1 tsp salt and pepper mix

Directions

Saute onion and chorizo in butter until onions are truslucent. Add eggs and seasoning then scramble. When eggs are 80% cooked fold in cheese and scallions. Serve immediately while still creamy.
